明天就是父亲节了,一起来做“黑森林蛋糕/巧克力樱桃蛋糕”,巧克力奶油版本。用我最爱的湿润巧克力蛋糕为蛋糕体。这次采用了很多新鲜的樱桃来自制浓厚多汁少甜樱桃馅料。还用了约60%调温黑巧克力来制作巧克力甘纳奶油糖霜。顶部淋上樱桃酱汁自然从边沿滴落,加上巧克力碎削和鲜樱桃布置,超丰富,食欲大开。湿润巧克力蛋糕+酸甜多汁的鲜樱桃馅料+浓厚巧克力甘纳奶油,整体咬下去非常有满足感。

收藏方式:做好冰箱隔夜冷藏再吃,味道更佳。密封收普通冰箱冷却, 3天吃完,取决于水果能耐多久。

Tomorrow is Father's Day. Let's make "Black Forest Cake/Chocolate Cherry Cake", chocolate cream version. Used my all-time favorite Moist Chocolate Cake as cake base. This time used loads of fresh cherries to make thick, juicy, less sweet cherry fillings. Also used about 60% couverture dark chocolate to make chocolate ganache cream frosting. Top drizzled with Cherry sauce naturally dripped down from edges, chocolate curls and fresh cherries decoration, super-rich and appetizing. Moist chocolate cake + sweet tangy juicy fresh cherry filling + rich chocolate ganache cream, overall taste in one bite is so satisfying.

Storage method: Once make chill in fridge overnight for better flavor. Keep in airtight container and chill in normal fridge, eaten within 3 days, depends on how long the fruits can last.

Two 7’ inch Chocolate Cake 巧克力蛋糕 (Video Recipe on top 食谱影片在上)
(Top Bottom Heat, On Fan Force, Middle Rack) (Preheated Oven 170c: 50-55minutes)

=Cherry Fillings 樱桃馅料=
400g Fresh Cherries 鲜樱桃 (Including Seeds 包括种子)
70g Caster Sugar 细砂糖
20g Freshly Squeezed Lemon Juice 鲜榨柠檬汁
0.3g Tiny Pinch Cinnamon Powder 小搓肉桂粉
15g Cornstarch 玉米淀粉
46g Water 水

=Chocolate Ganache Cream 巧克力甘纳奶油=
300g Dark Couverture Chocolate 黑调温巧克力 (200g Dark Choc黑巧54.5%+100g Dark Choc黑巧70.5%)
160g Dairy Whipping Cream 动物性淡奶油
8g Unsalted Butter 无盐牛油
500g Dairy Whipping Cream 动物性淡奶油 (Cold冷)
20g Caster Sugar 细砂糖
1g Vanilla Extract 香草精

Fresh Cherries 鲜樱桃
Chocolate Curls 巧克力碎削
